Is caramel color gluten-free?
Caramel color is gluten-free. In the US and Europe it's almost always made from corn, cane sugar, or beet sugar — not wheat or barley. Even when barley is used (rare, mostly in European beers), the intensive heat processing destroys gluten proteins. The Celiac Disease Foundation confirms caramel color is safe for celiacs.
When it's safe
- The product is sold in the US, Canada, or the EU (wheat-based caramel color would require disclosure)
- The ingredients don't otherwise list wheat, barley, or malt
When to avoid it
- The product is a beer or malted beverage — the caramel color isn't the issue, the malt is
- The label warns "contains wheat" for other reasons
